Ingredients

  • 1 1/2 lb. chicken pieces, skinned
  • 1/2 tsp. ground red pepper (optional)
  • 1/2 tsp. paprika
  • 1/4 cup salsa
  • 1/4 cup catsup
  • 1 tablespoon dried minced onion
  • 1 tablespoon soy sauce

Instructions

  1. Rinse the chicken and pat dry.
  2. Combine paprika and ground red pepper (if using); rub into the chicken pieces.
  3. Arrange the chicken pieces in a 1 2/3 to 2-quart microwave dish, with meaty portions toward the edge.
  4. Combine the remaining ingredients: salsa, catsup, dried minced onion, and soy sauce; spoon over the chicken.
