  • 6 chicken breast halves boned
  • 3/4 lb. white diced mushrooms

  • 2 Tbsp. flour
  • 1/2 cup white wine
  • 1/2 cup chicken broth or bouillon
  • 1 1/2 cups shredded Jarlsberg or Swiss cheese

Instructions

  2. Melt 2 tablespoons butter with oil in a large heavy skillet over low heat.
  3. Add chicken breasts and cook until done; set aside.
  4. Melt 2 more tablespoons butter in the skillet.
  5. Add mushrooms and cook until tender.
  6. Arrange broccoli in a single layer in the bottom of the prepared dish.
  7. Season chicken with lemon pepper.
  8. Arrange chicken over the broccoli in the dish.
  9. Preheat broiler.
  10. Melt the remaining butter in a saucepan.
  11. Whisk in flour, chicken broth, and white wine.
  12. Cook until the sauce thickens.
  13. Add 1 1/2 cups shredded Jarlsberg or Swiss cheese and stir until melted.
  14. Pour the sauce over the chicken and broccoli.
  15. Sprinkle with additional cheese over the chicken, if desired.
  16. Broil about 6 inches from heat for 3 to 5 minutes until bubbly and golden.
  17. Serve immediately.
