Ingredients

  • 1/2 cup corn muffin mix
  • 1/4 cup cooking oil
  • 2 tablespoons diced pimiento (optional)
  • 1 (16 1/2 oz.) can cream-style corn
  • 2 eggs
  • 1 teaspoon garlic salt
  • 1/2 cup shredded Cheddar cheese
  • paprika

Instructions

  1. Combine the corn muffin mix, cooking oil, cream-style corn, beaten eggs, garlic salt, and diced pimiento (if using) in a bowl and mix well.
  2. Pour the mixture into an ungreased, 8-inch microwave-safe dish.
  3. Cover with plastic wrap and microwave until set, about 5 minutes.
  4. Sprinkle with shredded Cheddar cheese and paprika before serving.
