Ingredients

  • 1 lb. lean ground beef
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 can cream of chicken soup
  • 1 (8 oz.) can mushroom stems and pieces, drained
  • 2 Tbsp. tomato paste
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. sour cream
  • 2 Tbsp. chopped parsley
  • 4 c. hot cooked rice or noodles

Instructions

  1. Place ground beef in a 2-quart microwave casserole; break up with a fork.
  2. Stir in chopped onion and minced garlic.
  3. Cover and cook on High for 5 to 6 minutes, or until beef is no longer red and onion is transparent; drain excess liquid.
  4. Stir in cream of chicken soup, drained mushrooms, tomato paste, salt, and pepper.
  5. Cover and cook on High for 7 to 8 minutes, stirring once.
  6. Stir in sour cream.
  7. Cook on High for 1 minute.
  8. Sprinkle with chopped parsley.
  9. Serve over hot cooked rice or noodles.
