Microwave Oatmeal Cake

Ingredients
- 1/2 cup quick cooking oats
- 1/2 cup boiling water ⓘ
- 3/4 cup all-purpose flour ⓘ
- 1/2 cup sugar ⓘ
- 1/3 cup packed brown sugar ⓘ
- 1/2 teaspoon baking soda ⓘ
- 1/2 teaspoon salt ⓘ
- 1/2 teaspoon cinnamon ⓘ
- 1/4 teaspoon baking powder ⓘ
- 1/4 teaspoon nutmeg ⓘ
- 1/3 cup shortening ⓘ
- 2 eggs ⓘ
- 3 tablespoons water ⓘ
- 1/4 cup chopped nuts ⓘ
Instructions
- Combine oats and boiling water. Set aside.
- In a mixing bowl, combine all remaining ingredients except oats and nuts. Blend at low speed, then medium speed for 2 minutes.
- Beat in oats at low speed for 20 to 30 seconds.
- Pour the batter into an ungreased pan.
- Place the pan on an inverted saucer in the microwave.
- Cook on Medium for 5 to 6 minutes, rotating 1/4 turn every 3 minutes.
- Increase power to High and microwave for an additional 2 to 6 minutes or until done.
- Let stand on the countertop for 5 to 10 minutes.
- Top with caramel topping before serving.
