Ingredients

  • 1/2 cup quick cooking oats
  • 1/2 cup boiling water
  • 3/4 cup all-purpose flour
  • 1/2 cup sugar
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon nutmeg
  • 1/3 cup shortening
  • 2 eggs
  • 3 tablespoons water
  • 1/4 cup chopped nuts

Instructions

  1. Combine oats and boiling water. Set aside.
  2. In a mixing bowl, combine all remaining ingredients except oats and nuts. Blend at low speed, then medium speed for 2 minutes.
  3. Beat in oats at low speed for 20 to 30 seconds.
  4. Pour the batter into an ungreased pan.
  5. Place the pan on an inverted saucer in the microwave.
  6. Cook on Medium for 5 to 6 minutes, rotating 1/4 turn every 3 minutes.
  7. Increase power to High and microwave for an additional 2 to 6 minutes or until done.
  8. Let stand on the countertop for 5 to 10 minutes.
  9. Top with caramel topping before serving.
