Ingredients

  • 2 Tbsp. margarine
  • 2 or 3 medium potatoes, sliced
  • 1/3 c. onion, chopped
  • 1 clove garlic, chopped
  • 1/2 c. sliced green pepper
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 c. grated Parmesan cheese
  • sprinkle of paprika

Instructions

  1. Melt the margarine in a baking dish.
  2. Add sliced potatoes, chopped onion, and chopped garlic to the dish.
  3. Cover loosely with Saran Wrap and microwave on full power for 5 minutes.
  4. Add sliced green pepper, salt, and pepper, then toss to combine.
  5. Sprinkle grated Parmesan cheese over the mixture and garnish with paprika.
  6. Cook for an additional 6 minutes or until the potatoes are tender.
