Ingredients

  • 1/2 cup shortening
  • 2 cups flour
  • 2 cups cornmeal (yellow)
  • 8 level teaspoons baking powder
  • 2 teaspoons salt
  • 1/2 scant cup sugar
  • 1 cup dry milk
  • 2 eggs
  • 2 cups water

Instructions

  1. Heat the oven to 375° to 400° Fahrenheit.
  2. Put shortening in a large cake pan and melt it in the oven.
  3. In a mixing bowl, combine all the remaining ingredients and mix by hand.
  4. Beat the mixture for about one minute.
  5. Pour the batter into the melted shortening in the pan.
  6. Bake until a toothpick inserted into the center comes out clean, approximately 25 to 30 minutes.
