Ingredients

  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 cups shredded unpeeled zucchini
  • 3/4 cup chopped walnuts

Instructions

  1. Beat sugar, vegetable oil, eggs, and vanilla in a mixing bowl until fluffy.
  2. In a separate bowl, mix flour, salt, baking soda, and cinnamon.
  3. Add the dry ingredients to the egg mixture and mix on medium speed until blended.
  4. Stir in shredded zucchini and chopped walnuts.
  5. Pour the batter into a greased 9 x 5 x 3-inch loaf pan.
  6. Bake at 350°F for 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool before removing from the pan and serving.
