Ingredients

  • 2 c. sugar
  • 1 1/2 c. oil
  • 4 eggs
  • 2 c. sifted flour
  • 2 tsp. cinnamon
  • 2 tsp. nutmeg
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 3 c. grated raw carrots
  • 1 c. chopped walnuts

Instructions

  1. Mix and beat well the sugar, oil, and eggs.
  2. Add the sifted flour, cinnamon, nutmeg, soda, salt, and baking powder, and mix well.
  3. Add the grated carrots and chopped walnuts, and mix thoroughly.
  4. Pour the batter into greased and floured 8-inch pans (2 thick layers or 3 thinner layers) or a 13 x 9-inch pan.
  5. Bake at 350°F for 30 minutes.
