Ingredients

  • 1 1/2 cups biscuit baking mix
  • 1/2 cup butter or margarine, melted
  • 1/2 cup milk
  • 1 egg, beaten
  • 1 cup cooked, diced ham
  • 1/2 cup shredded zucchini
  • 1/2 cup chopped green onion
  • 1/2 cup grated Swiss cheese

Instructions

  1. Preheat oven to 425°F.
  2. Prepare mini muffin cups with nonstick cooking spray.
  3. Place biscuit mix in a large bowl.
  4. Combine melted butter, milk, and beaten egg in a 2-cup glass measure.
  5. Mix well.

  8. Fill muffin cups two-thirds full with the mixture.
  9. Bake for 8 to 12 minutes until golden brown.
