Ingredients

  • 1 pint salmon
  • 4 eggs
  • 1 clove garlic
  • breadcrumbs
  • 1/4 cup diced celery
  • 1/4 cup diced onion
  • 1/2 teaspoon thyme
  • oil for frying

Instructions

  1. Drain salmon; flake with a fork.
  2. In a bowl, add 3 eggs, minced garlic, 1/2 cup breadcrumbs, diced celery, diced onion, and crumbled thyme; mix well.
  3. Form the mixture into 12 small patties.
  4. Beat the remaining egg.
  5. Brush the beaten egg on both sides of each patty.
  6. Coat each patty with breadcrumbs.
  7. Refrigerate the patties for 1 hour or overnight.
  8. Fry the patties in hot oil until golden brown.
