Ingredients

  • 4 eggs
  • 1 can (10 3/4 oz.) cream of celery soup
  • 1/2 cup milk
  • 1/4 teaspoon crushed oregano leaves
  • 2 tablespoons Parmesan cheese
  • pastry for 2 crust 9-inch pie
  • 1 cup shredded Swiss cheese
  • 3/4 cup diced cooked ham

Instructions

  1. In a medium bowl, beat together eggs, cream of celery soup, milk, crushed oregano leaves, and Parmesan cheese until well combined.
  2. Set the mixture aside.
  3. Divide the pastry dough in half.
  4. On a floured surface, roll out one half to 1/8-inch thickness.
  5. Cut out 4-inch rounds using a scalloped-edged cookie cutter.
  6. Line 3-inch muffin pan cups with the pastry rounds.
  7. Repeat with the remaining dough.
  8. Fill each pastry-lined cup with a mixture of diced cooked ham and shredded Swiss cheese.
  9. Pour the egg and soup mixture over the fillings.
  10. Bake in a preheated oven at 375°F (190°C) for about 20 minutes or until golden and set.
