A creamy mixed veggie casserole with cheesy topping and crunchy bread crumbs, perfect for a comforting family meal or potluck side dish.

Ingredients

  • 2 c. mixed vegetables
  • 1 c. celery, chopped
  • 1/2 c. onion, chopped
  • 2 Tbsp. butter
  • 3/4 c. mayonnaise
  • 1 c. shredded cheese
  • 1/2 c. buttered bread crumbs

Instructions

  1. Drain the mixed vegetables and in a bowl, combine with chopped celery, chopped onion, mayonnaise, shredded cheese, and bread crumbs.
  2. Spoon the mixture into a greased 1 1/2-quart casserole dish.
  3. Combine 2 tablespoons of margarine with crushed crackers or bread crumbs and sprinkle over the top of the casserole.
  4. Bake at 300°F until bubbly and golden on top.
