Ingredients

  • 1 1/4 cups molasses
  • 1/2 cup white sugar
  • 2 eggs
  • 1/2 cup shortening
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • self-rising flour
  • prepared apples

Instructions

  1. Put molasses in a saucepan and warm it on the stove, then stir in the baking soda and remove from heat.
  2. The molasses will turn yellow as the soda reacts.
  3. Beat the eggs lightly in a bowl.
  4. In the molasses mixture, stir in all remaining ingredients except the apples.
  5. Gradually add enough self-rising flour to make a dough similar to biscuit dough.
  6. Grease a cake pan and roll out or pat the dough into a thin layer.
  7. Bake at 350°F (175°C) until the surface is light brown, about 25 minutes.
  8. Once baked and cooled, spread prepared apples between the layers to assemble the cake.
