Ingredients

  • 1 pkg. lemon jello (1 cup boiling water)
  • 1 envelope gelatin (1/4 cup boiling water)
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1 small can crushed pineapple
  • 1 can fruit cocktail
  • 1/2 cup chopped pecans
  • 8 ounces cream cheese
  • 1/2 pint whipping cream

Instructions

  1. Mix together the gelatin, sugar, salt, and lemon jello in a bowl.
  2. Let the mixture cool slightly, then add the crushed pineapple and fruit cocktail.
  3. Pour the mixture into a mold and chill for 4 hours until set.
  4. In a separate bowl, whip the whipping cream until soft peaks form.
  5. Cut the cream cheese into small pieces and add to the whipped cream, then whip until smooth.
  6. Fold the whipped cream mixture into the fruit mixture gently.
  7. Add chopped pecans and fold in gently.
  8. Pour the combined mixture into the mold and chill for additional time if needed before serving.
