Ingredients

  • 1 lb. navy beans
  • 1 1/2 lb. cubed ham
  • 1 c. onions
  • 2 garlic cloves, minced
  • 1/4 c. parsley
  • 1 1/2 tsp. salt
  • 1 tsp. basil leaves
  • 1/2 tsp. pepper
  • 1/2 tsp. oregano leaves
  • 1 bay leaf
  • 2 c. carrots
  • 1 c. celery

Instructions

  1. Place navy beans in a 4-quart Dutch oven with 6 to 8 cups water. Heat to boiling and let simmer for 2 minutes.
  2. Remove from heat, cover, and let stand for 1 hour.
  3. Drain the beans.
  4. Add 2 quarts water, cubed ham, chopped onions, minced garlic, parsley, salt, basil, pepper, oregano, and bay leaf to the Dutch oven.
  5. Heat to boiling again.
  6. Reduce heat and simmer for 1 1/2 hours or until beans are tender.
