Ingredients

  • 4 cups cooked chicken, diced
  • 1 can cream of chicken soup
  • 1 can chicken broth
  • 1/2 teaspoon tarragon
  • 1 box frozen mixed vegetables
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 1/2 cups buttermilk
  • 1/2 cup margarine, melted

Instructions

  1. Preheat oven to 350°F.
  2. Place cooked, diced chicken in a lightly greased 13 x 9-inch baking dish.
  3. Mix cream of chicken soup and chicken broth together with tarragon; pour over the chicken.
  4. Spread frozen mixed vegetables over the top of the chicken mixture.
  5. In a bowl, combine flour and baking powder; add buttermilk and melted margarine.
  6. Stir until a thin dough forms; pour evenly over the chicken mixture.
  7. Bake uncovered for about 1 hour until the crust rises to the top and browns lightly.
