  • 8 to 8 1/2 c. sifted flour

Instructions

  1. Soften yeast in warm water.
  2. Stir in mashed potato and 1/2 cup sugar; cover and let stand until doubled, about 1 1/2 hours.
  3. Add scalded milk to butter and stir until melted; cool.
  4. Mix in eggs, 1/2 cup sugar, and salt.
  5. Stir into yeast mixture.
  6. Gradually add sifted flour, stirring in enough to form a soft dough.
  7. Knead dough on a floured surface until smooth.
  8. Place in a greased bowl and grease the top of the dough.
  9. Cover and let rise until doubled, about 1 1/2 hours.
  10. Punch down dough and divide into two portions.
  11. Roll out one portion into a 12-inch square, 1/4-inch thick.
  12. Brush with 1 tablespoon melted butter.
  13. Cut the dough into 2-inch squares.
  14. Turn up the corners of each square together.
