Ingredients

  • 2 c. milk
  • 2 Tbsp. minced onion
  • 1 bay leaf
  • 4 Tbsp. flour
  • 4 Tbsp. butter
  • 3 Tbsp. grated Swiss cheese
  • 3 Tbsp. Parmesan cheese
  • 2 Tbsp. heavy cream

Instructions

  1. Bring milk, minced onion, and bay leaf to a full boil.
  2. Let the mixture stand for 10 minutes to infuse flavors.
  3. Strain the milk to remove onion and bay leaf.
  4. Over low heat, melt butter in a saucepan.
  5. Add flour to the melted butter and cook until light brown.
  6. Gradually add the strained milk and heavy cream, stirring constantly until the mixture starts to boil.
  7. Stir in grated Swiss cheese and Parmesan cheese until melted and smooth.
  8. Season with salt and pepper to taste.
