Ingredients

  • 3 eggs, beaten
  • 2/3 cup oil
  • 1 cup sweet milk
  • 1 cup cornmeal
  • 2-3 tablespoons flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 small grated onion
  • 1 cup chopped sweet pepper
  • 1 cup cream-style corn

Instructions

  1. Mix together eggs, oil, sweet milk, cornmeal (adding 2 or 3 Tbsp. flour), salt, baking powder, grated onion, chopped sweet pepper, and cream-style corn.
  2. Pour half of the mixture into a greased baking dish.
  3. Sprinkle grated cheese evenly over the first layer of mixture.
  4. Pour the remaining mixture into the dish over the cheese.
  5. Bake at 400°F (200°C) for 30 minutes or until the top is golden brown.
