Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup margarine or butter, softened
  • 3 eggs
  • 2 teaspoons vanilla
  • 1 1/2 cups unbleached all-purpose flour
  • 1/2 cup wheat bran
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups grated carrots
  • 1 cup peeled, cored and chopped apples
  • 1/2 cup golden raisins, softened in hot water and drained
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1/2 cup shredded coconut

Instructions

  1. Preheat oven to 325°F and grease a 9-inch loaf pan.
  2. In a large bowl, cream together the sugars and margarine until smooth and light.
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in vanilla extract.
  5. In a separate bowl, combine flour, wheat bran, baking powder, cinnamon, and salt.
  6. Add grated carrots, chopped apples, raisins, chopped nuts, and shredded coconut; toss to combine thoroughly.
  7. Stir the dry ingredients into the creamed mixture, blending well.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
