  • 2 lb. carrots, peeled and sliced 1/4-inch thick
  • 10 c. defatted chicken broth
  • salt to taste
  • ground black pepper to taste

Instructions

  1. Heat the olive oil in a large heavy pot over medium-low heat.
  2. Add the chopped onion and minced fresh ginger; cook until the onion is wilted, about 10 minutes, stirring occasionally.
  3. Add the raw long grain rice and curry powder to the pot.
  4. Cook for 1 minute, stirring well.
  5. Add the peeled and sliced carrots and chicken broth to the pot.
  6. Bring to a boil, then reduce heat and simmer until the carrots and rice are tender, about 25 minutes.
  7. Season with salt and ground black pepper to taste.
  8. Puree the soup until smooth using an immersion blender or in batches in a regular blender.
  9. Serve hot, garnished with chopped fresh mint leaves.
