- Cut mozzarella into 1 1/2-inch cubes.
- Mix flour, paprika, salt, and pepper in a shallow dish.
- Put eggs into a second dish and bread crumbs into a third dish.
- Lightly coat cheese cubes in seasoned flour.
- Dip coated cheese cubes into eggs, then into bread crumbs to coat evenly.
- Repeat the coating process once more with eggs and bread crumbs.
- Preheat oil to 350°F (175°C).
- Fry the cheese cubes about 2 minutes until golden brown.
- Use a slotted spoon to transfer the fritters to paper towels to drain.
- Serve hot.
