Mud Bug Soup
Ingredients
- 1 lb. shrimp ⓘ
- 4 Tbsp. flour ⓘ
- 4 Tbsp. butter ⓘ
- 1 c. fish stock ⓘ
- 1 1/2 c. green pepper ⓘ
- 1 c. chopped onions ⓘ
- 1 c. chopped green onions ⓘ
- 1 c. white wine ⓘ
- 4 Tbsp. Worcestershire sauce ⓘ
- 1/4 tsp. black pepper ⓘ
- 1/4 tsp. salt ⓘ
- 1 tsp. cumin ⓘ
- 1/4 tsp. cayenne pepper ⓘ
- 1 tsp. thyme ⓘ
- 1 c. chopped celery ⓘ
- 2 to 4 cloves garlic ⓘ
Instructions
- Make a roux with butter and flour; add fish stock and wine. Simmer 5 to 10 minutes.
- Add rest of seasoning.
- Cook for 20 minutes.
- Serve as soup or serve with rice.
