Creamy Muenster Chicken features tender breaded chicken breasts topped with melted cheese and mushrooms, baked in broth for a comforting, flavorful dish ideal for family dinners.

Ingredients

  • 1 container Italian bread crumbs
  • 1 (4 oz) can mushrooms
  • 2 small cans chicken broth
  • 2 small packages Muenster cheese
  • 4 or 5 eggs
  • 8 boneless chicken breast halves

Instructions

  1. Beat eggs in a bowl.
  2. Dip each chicken breast into the beaten eggs.
  3. Roll the chicken in Italian bread crumbs.
  4. Brown the breaded chicken in butter in a pan.
  5. Place the browned chicken in a 13 x 9 x 2-inch baking dish.
  6. Pour chicken broth over the chicken.
  7. Season each breast with salt and pepper.
  8. Sprinkle grated Muenster cheese over each chicken breast.
  9. Add mushrooms on top of the cheese.
  10. Bake at 350°F (175°C) for about 45 minutes to 1 hour.
  11. Cook a large pot of rice separately.
  12. Serve each chicken breast on a bed of rice, spooning some of the cooking juices over.
