Ingredients

  • 1 lb. mushrooms
  • 3 scallions, sliced
  • 2/3 cup olive oil
  • 4 Tbsp. lemon juice
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. salt
  • 1/2 tsp. dry mustard
  • 12 slices bacon
  • black pepper to taste
  • lettuce or fresh spinach

Instructions

  1. Cook the bacon until crispy and cut into 1-inch pieces.
  2. Combine all ingredients except mushrooms and bacon to make the marinade.
  3. Pour the marinade over the mushrooms and toss to coat.
  4. Cover and chill in the refrigerator for 4 to 6 hours.
  5. Just before serving, spoon the mushroom mixture over lettuce or spinach.
  6. Sprinkle with the cooked bacon pieces.
  7. Drizzle with the remaining marinade before serving.
