Ingredients

  • 1 lb. mushrooms
  • 1/2 cup celery
  • 1/2 cup green peppers
  • 1 cup onions
  • salt and pepper
  • 1 cup mayonnaise
  • 12 slices bread
  • 2 eggs
  • 1 1/2 cups milk
  • 1 can mushroom soup
  • Parmesan cheese

Instructions

  1. Saute mushrooms with celery, green peppers, and onions.
  2. Season with salt and pepper to taste.
  3. Mix the sautéed vegetables with mayonnaise.
  4. Place 4 or 5 slices of soft bread cubed at the bottom of a casserole dish.
  5. Spread a layer of the mushroom mixture over the bread.
  6. Add 3 to 4 slices of cubed bread on top of the mushroom mixture.
  7. Beat 2 eggs with 1 1/2 cups of milk and pour over the casserole.
  8. Refrigerate overnight.
  9. In the morning, spread undiluted mushroom soup over the mixture.
  10. Add 2 or 3 slices of cubed bread on top and refrigerate until ready to bake.
  11. Sprinkle with Parmesan cheese and bake at 350°F for 50 to 60 minutes.
