Mushroom-Stuffed Pork Chops

Ingredients

  • 4 thick loin chops
  • 1 medium onion
  • 3 Tbsp. butter
  • 1/3 cup mushrooms
  • thyme
  • 2 Tbsp. parsley
  • 1/2 cup bread crumbs
  • salt
  • pepper

Instructions

  1. Have the butcher cut a pocket in each pork chop.
  2. Sauté chopped onion in butter until transparent.
  3. Add finely chopped mushrooms, a few leaves of thyme, chopped parsley, and toasted bread crumbs to the onion.
  4. Mix well and remove from heat.
  5. Season the mixture to taste and stir in the lightly beaten egg.
  6. Stuff the chops with the mushroom mixture.
  7. Brown the stuffed chops in a pan.
  8. Bake in a greased casserole for 1 hour at 350°F.
