Ingredients

  • 1/4 cup shortening
  • 1 onion, minced
  • 1/4 cup grated green pepper, finely chopped
  • 2 pounds ground chuck beef
  • 1 cup rolled oats, uncooked
  • 1/2 cup catsup
  • 2 eggs, beaten
  • 3/4 cup tomato juice
  • 3 1/2 teaspoons salt
  • 2 teaspoons paprika
  • 1 teaspoon dry mustard
  • 1/4 cup horseradish

Instructions

  1. Melt the shortening in a skillet.
  2. Add minced onion and finely chopped green pepper.
  3. Fry for about 10 minutes until vegetables are tender.
  4. In a large mixing bowl, combine all remaining ingredients except the catsup.
  5. Add the sautéed onion and green pepper, then mix thoroughly.
  6. Pack the mixture into a 5 x 10-inch Spry-coated loaf pan.
  7. Spread catsup on top of the meat loaf.
  8. Bake in a hot oven at 400°F for 1 hour.
  9. Serve hot or cold.
