My Carrot Bread

Instructions
- Preheat oven to 350.
- Mix dry ingredients.
- Add currants, coconut and nuts.
- Mix.
- Mix oil and carrots and add to dry.
- Mix.
- Put in loaf pan (or any shape you want).
- Let it stand for 20 minutes.
- Bake 1 hour.
- Cool and remove from pan.
- Keeps for 2 weeks.
