My Squash Casserole

Ingredients

  • 3 cups squash
  • 3/4 cup chopped onion
  • 2 eggs
  • 1 can cream of mushroom soup
  • 3/4 stick butter
  • 2 cups cracker crumbs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup grated cheese

Instructions

  1. Cook squash until tender, then drain water off.
  2. Add butter, salt, pepper, and cream of mushroom soup to the squash.
  3. Mix all ingredients together.
  4. Add beaten eggs, chopped onion, grated cheese, and cracker crumbs to the mixture.
  5. Pour the mixture into a greased casserole dish.
  6. Bake uncovered at 375°F for about 40 minutes.
  7. Add more cheese on top before serving if desired.
