Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup sugar
  • 1/2 cup corn oil
  • 1 teaspoon vanilla
  • 2 large eggs
  • 1 cup fresh cooked shredded beets
  • 1/2 cup chopped walnuts

Instructions

  1. Sift together flour, baking soda, baking powder, salt, and cinnamon.
  2. Beat together sugar, oil, and vanilla until blended.
  3. Beat in eggs, one at a time, until blended.
  4. Stir in the flour mixture gradually until smooth.
  5. Fold in shredded beets and chopped walnuts.
  6. Pour batter into an oiled 8 1/2 x 4 1/2-inch loaf pan.
  7. Bake in a preheated 350°F oven until done, approximately 1 hour.
  8. Loosen edges and turn out onto a rack.
  9. Place cake in a plastic bag and let stand overnight at room temperature.
