Instructions
- Combine butter, sugar, cocoa, and vanilla in the top of a double boiler.
- Cook over hot water until butter melts.
- Add the beaten egg and cook, stirring constantly, until thickened, about 3 minutes.
- Mix in the crushed graham cracker crumbs and flaked coconut.
- Press the mixture into a buttered 9-inch square pan.
- Prepare the vanilla pudding mix according to package instructions, adding milk as directed.
- Once the base layer is set, spread the pudding evenly over it.
- Prepare the confectioners' sugar icing if desired and spread on top.
- Chill before serving to allow flavors to meld and the candy to set.
