Nectarine Blitz Torte

A delightful layered nectarine torte with fluffy meringue, sweet nectarines, and crunchy almonds, perfect for summer gatherings or elegant dessert occasions.

Ingredients

  • 1/2 cup shortening
  • 3/4 cup sifted powdered sugar
  • 4 eggs
  • 1 cup flour
  • 1 teaspoon salt
  • 3 tablespoons milk
  • 1 1/3 cups sugar
  • 3 tablespoons sliced almonds
  • 4 or 5 fresh nectarines
  • 1/2 cup whipping cream

Instructions

  1. Cream together the shortening and powdered sugar.
  2. Beat in egg yolks one at a time.
  3. Sift flour, baking powder, and salt.
  4. Add to the creamed mixture alternately with milk.
  5. Spread the batter evenly in two greased and floured 9-inch round cake pans.
  6. Beat egg whites until foamy.
  7. Gradually add 1 cup of sugar and continue beating until stiff peaks form.
  8. Spread the meringue over the cake batter in each pan.
  9. Sprinkle each layer with 1 tablespoon of sugar and 1 tablespoon of sliced almonds.
  10. Bake at 325°F (163°C) for 30 minutes.
  11. Dice 2 cups of nectarines and sprinkle with 2 tablespoons of sugar.
  12. Place a cake layer, meringue side down, on the serving platter.
  13. Top with a layer of diced nectarines and whipped cream.
  14. Repeat the layers and serve.
