Ingredients

  • 12 to 14 medium to large mushroom caps
  • 1/4 cup finely diced onion
  • 1/4 cup finely diced celery
  • 1/4 cup finely diced green peppers
  • 2 tablespoons butter or margarine
  • 3 ounces softened cream cheese
  • 1 cup finely ground bread crumbs
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Wash the mushroom caps and lay them on paper towels to dry until needed.
  2. In a large skillet, sauté onion, celery, and green pepper in butter until slightly softened.
  3. Add cream cheese and stir until melted and well combined.
  4. Add bread crumbs, lemon juice, salt, and pepper; mix well.
  5. Stuff each mushroom cap with the mixture.
  6. Place stuffed mushroom caps on a greased baking sheet.
  7. Bake at 375°F for 10 to 12 minutes.
  8. Optional: Broil for a few minutes if you want them browned more.
  9. Serve warm.
