Neptune Casserole

Instructions
- Saute chopped celery, onion, and bell pepper in margarine.
- Mix the sautéed vegetables with cooked shrimp, sour cream, cream of celery soup, chopped pimento, drained mushrooms, cooked rice, salt, and pepper.
- Pour the mixture into a greased 11 x 7 inch casserole dish.
- Cover and bake at 325°F for 40 minutes.
- Uncover and sprinkle grated cheese on top.
- Bake uncovered for an additional 5 to 10 minutes until cheese is melted and bubbly.
