Ingredients

  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 1 lb cooked peeled shrimp
  • 3/4 cup sour cream
  • 3 cups cooked rice
  • 1 can cream of celery soup
  • 3 oz chopped pimento
  • 3 oz jar mushrooms drained
  • salt and pepper
  • 1/2 stick margarine

Instructions

  1. Saute chopped celery, onion, and bell pepper in margarine.
  2. Mix the sautéed vegetables with cooked shrimp, sour cream, cream of celery soup, chopped pimento, drained mushrooms, cooked rice, salt, and pepper.
  3. Pour the mixture into a greased 11 x 7 inch casserole dish.
  4. Cover and bake at 325°F for 40 minutes.
  5. Uncover and sprinkle grated cheese on top.
  6. Bake uncovered for an additional 5 to 10 minutes until cheese is melted and bubbly.
