Ingredients

  • 1 Tbsp. fat
  • 1 lb. ground beef
  • 1 large onion, minced
  • 2 c. diced celery
  • 5 to 6 oz. uncooked noodles
  • 1 (No. 1) can tomatoes
  • 3/4 c. shredded cheese
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 small can water chestnuts (optional)

Instructions

  1. Brown the ground beef in hot fat in a skillet.
  2. Add minced onion and diced celery. Cook, stirring often, until opaque, about 10 minutes.
  3. Gently mix in the hot, drained uncooked noodles, cooked according to package directions.
  4. Add canned tomatoes, shredded cheese, salt, pepper, and water chestnuts if using. Let simmer gently.
  5. Alternatively, transfer to a greased 2-quart casserole and bake, covered, at 350°F for 45 minutes.
  6. If baked, shred more cheese over the top before serving.
