Ingredients

  • 1 1/2 c. corn oil
  • 2 c. sugar
  • 3 eggs
  • 2 c. flour
  • 2 tsp. cinnamon
  • 2 tsp. soda
  • 2 tsp. vanilla
  • 1 tsp. salt
  • 2 c. shredded carrots
  • 1 c. chopped nuts
  • 1/2 c. crushed pineapple

Instructions

  1. Combine all ingredients in a large bowl and mix until well blended.
  2. Pour batter into a 9 x 13-inch buttered pan.
  3. Bake at 350°F for 1 hour.
  4. Allow the cake to cool completely.
  5. Ice with Cream Cheese Icing.
