Nutty Gingerbread
Ingredients
- 3/4 c. brown sugar ⓘ
- 3/4 c. melted shortening ⓘ
- 3/4 c. molasses ⓘ
- 2 eggs ⓘ
- 2 1/4 c. flour (lightly spooned in c.) ⓘ
- 3/4 c. chopped pecans ⓘ
- 1 c. boiling water ⓘ
- 1 1/2 tsp. cinnamon ⓘ
- 2 1/2 tsp. baking powder ⓘ
- 2 tsp. ginger ⓘ
- 3/4 tsp. soda ⓘ
- 1/2 tsp. nutmeg ⓘ
- 1/2 tsp. ground cloves ⓘ
- whipped topping ⓘ
Instructions
- In large mixing bowl combine sugar, shortening and molasses. Add eggs and beat well with wooden spoon.
- Stir together dry ingredients and nuts and add to sugar mixture, mixing well.
- Stir in water.
- Pour in greased 13 x 9 x 2-inch pan and bake in preheated oven for 40 minutes at 350°.
