A creamy, nutty spinach casserole combining tender spinach, melted cheese, toasted nuts, and savory mushroom soup, perfect for family dinners or holiday gatherings.

Ingredients

  • 2 (10 oz.) pkg. frozen chopped spinach
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 2 eggs
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped green onion
  • 1/4 cup chopped nuts, toasted
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Place spinach in a 1 1/2-quart microwave-safe casserole. Cover.
  2. Microwave on High for 8 minutes or until spinach is heated through, stirring twice during cooking.
  3. Drain well.
  4. Stir in cream of mushroom soup until smooth.
  5. Stir in remaining ingredients until well blended.
  6. Microwave, uncovered, on High for 12 minutes or until set in the center, rotating dish twice during cooking.
