Oat Nut Bran Muffins
Ingredients
- 5 c. flour ⓘ
- 2 c. sugar ⓘ
- 5 tsp. baking soda ⓘ
- 1 tsp. salt ⓘ
- 1 to 2 tsp. cinnamon ⓘ
- 1 c. All-Bran cereal ⓘ
- 1 c. oatmeal ⓘ
- 1 c. oat bran cereal ⓘ
- 2 c. 40% bran flakes ⓘ
- 2 c. raisins ⓘ
- 2 c. chopped pecans ⓘ
- 1 c. Puritan oil ⓘ
- 4 eggs or 1 c. Egg Beaters ⓘ
- 1 c. water
- 1 c. applesauce ⓘ
- 1 qt. buttermilk ⓘ
Instructions
- Sift flour, sugar, soda, salt and cinnamon together.
- Add cereals, raisins and nuts.
- Combine milk, eggs, oil, water and applesauce.
- Stir liquid mixture with dry mixture only until moist.
- Fill greased muffin tin 2/3 full.
- Bake at 400° for 20 minutes.
- Batter may be kept from 4 to 6 weeks in refrigerator.
