Oat Nut Bran Muffins

Ingredients

  • 5 c. flour
  • 2 c. sugar
  • 5 tsp. baking soda
  • 1 tsp. salt
  • 1 to 2 tsp. cinnamon
  • 1 c. All-Bran cereal
  • 1 c. oatmeal
  • 1 c. oat bran cereal
  • 2 c. 40% bran flakes
  • 2 c. raisins
  • 2 c. chopped pecans
  • 1 c. Puritan oil
  • 4 eggs or 1 c. Egg Beaters
  • 1 c. water
  • 1 c. applesauce
  • 1 qt. buttermilk

Instructions

  1. Sift flour, sugar, soda, salt and cinnamon together.
  2. Add cereals, raisins and nuts.
  3. Combine milk, eggs, oil, water and applesauce.
  4. Stir liquid mixture with dry mixture only until moist.
  5. Fill greased muffin tin 2/3 full.
  6. Bake at 400° for 20 minutes.
  7. Batter may be kept from 4 to 6 weeks in refrigerator.
