Ingredients

  • 1 1/2 c. rolled oats
  • 1/2 c. all-purpose flour
  • 1/2 c. whole wheat flour
  • 1/4 c. all-bran cereal
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 c. unsweetened applesauce
  • 1/3 c. vegetable oil
  • 2 eggs
  • 1 c. raisins
  • 1/2 c. chopped nuts

Instructions

  1. Mix oats, all-purpose flour, whole wheat flour, all-bran cereal, baking soda, baking powder, cinnamon, and salt in a bowl.
  2. Stir in applesauce, vegetable oil, and eggs until well blended.
  3. Fold in raisins and chopped nuts until evenly distributed.
  4. Pour the batter into a lightly greased 9 x 5 x 3-inch loaf pan.
  5. Bake in a preheated oven at 350°F (175°C) for 50 to 60 minutes.
  6. Allow the bread to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
