Oatmeal Nut Waffles

Ingredients

  • 1 1/2 c. whole wheat flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 c. milk
  • 2 eggs or 1 egg and 1 egg white
  • 1/4 c. margarine, melted
  • 2 Tbsp. honey
  • 1 c. regular oats (uncooked)
  • 1 c. finely chopped pecans

Instructions

  1. Combine in a mixing bowl the wheat flour, baking powder and salt.
  2. Mix well.
  3. Add milk, eggs, margarine and honey and beat at medium speed of an electric mixer until smooth.
  4. Stir in oats and pecans.
  5. Bake in a preheated, lightly oiled waffle iron about 5 minutes or until done.
  6. Yields 12 to 14 waffles.
