Ingredients

  • 1 1/4 c. all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1 c. butter, softened
  • 3/4 c. sugar
  • 3/4 c. packed brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 3 c. quick or old fashioned oats
  • 2 c. butterscotch chips

Instructions

  1. Combine flour, baking soda, salt, and cinnamon in a small bowl.
  2. Beat butter, sugars, eggs, and vanilla in a large mixer bowl until creamy.
  3. Gradually add in the flour mixture and stir until combined.
  4. Stir in oats and butterscotch chips.
  5. Drop by teaspoonfuls onto an ungreased baking sheet.
  6. Bake in a preheated 375°F oven for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crispy cookies.
  7. Let stand for 2 minutes before removing to a wire rack to cool completely.
