Ingredients

  • 4 cups flour
  • 2 teaspoons baking powder
  • 1 1/4 teaspoons salt
  • 2 teaspoons ginger
  • 1 teaspoon soda
  • 1 cup white sugar
  • 2 eggs
  • 1 cup butter
  • 1 cup buttermilk
  • 1 cup molasses or brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sift flour together with baking powder, salt, ginger, soda, cinnamon, and vanilla.
  3. Beat eggs and sugar together with the butter until well combined.
  4. Mix all ingredients to form a cookie-like dough.
  5. Prepare 8 or 9-inch pans by greasing and lining with wax paper.
  6. Sprinkle the pans with flour.
  7. Pat a thin layer of dough into each pan and bake until brown and crisp, about 12 minutes.
  8. Repeat the process until all layers are baked.
  9. Spread apple butter, applesauce, or dried apples between each layer, on top, and on the sides of the cake.
