Ingredients

  • 1 pint stewing oysters
  • 1 large egg
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 quart milk or half and half cream
  • 3 tablespoons butter
  • salt
  • celery salt
  • pepper

Instructions

  1. Drain the oysters, reserving the liquid, and remove any shell fragments.
  2. Combine the beaten egg, Worcestershire sauce, and the reserved oyster liquid in a bowl.
  3. Add the oysters to the mixture and set aside.
  4. Heat the milk or half and half with butter, salt, celery salt, and pepper until warm.
  5. When the butter has melted, gradually add the oyster mixture to the milk.
  6. Cook over low heat, stirring constantly, until the oysters curl but do not boil.
  7. Adjust seasonings as needed.
  8. Serve the stew hot with oysterette crackers.
