Ingredients

  • 2 tsp margarine
  • 2 Tbsp flour
  • 3/4 c water
  • 1 packet chicken broth and seasoning mix
  • 1 small zucchini, cut into julienne strips 1 x 1/2-inch
  • 1 oz green onion, sliced
  • 1/4 c tomatoes, drained and coarsely chopped
  • 1/8 tsp dried thyme (optional)
  • 6 1/2 to 7 oz tuna, drained
  • minced parsley

Instructions

  1. Melt margarine in the top half of a double boiler over boiling water.
  2. Add flour and stir until a paste is formed.
  3. Gradually stir in water.
  4. Add chicken broth and seasoning mix.
  5. Cook and stir until thickened. Add zucchini and green onion.
  6. Cover and simmer for 5 minutes.
  7. Stir in tomatoes and drained tuna.
  8. Heat until hot.
  9. Garnish with minced parsley before serving.
