Ingredients

  • 1 lb. can pumpkin
  • 3/4 cup oil
  • 1/2 cup water
  • 2 1/2 cups all-purpose flour
  • 2 1/4 cups sugar
  • 1 1/2 teaspoons baking soda
  • 1 1/4 teaspoons salt
  • 3/4 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 cup yellow raisins
  • 1/2 cup chopped walnuts

Instructions

  1. In a large bowl, beat together eggs, pumpkin, oil, and water.
  2. Add flour, sugar, baking soda, salt, nutmeg, cinnamon, raisins, and walnuts to the mixture.
  3. Pour the batter into three buttered (1 pound) coffee cans.
  4. Bake in a preheated oven at 350°F for 1 hour and 15 minutes or until a straw inserted in the cake comes out clean.
