  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 to 3 slices cooked ham, diced
  • 2 c. regular rice
  • 1 can chicken broth

Instructions

  1. Melt butter in a large skillet.
  2. Brown the diced chicken on all sides.
  3. Add chopped onion and bell pepper to the skillet.
  4. Cook for 4 to 5 minutes until the vegetables are soft.
  5. Add diced ham (if using), rice, and chicken broth to the skillet.
  6. Add enough water to cover the rice.
  7. Cover and cook over low-medium heat for about 45 minutes.
  8. Stir the mixture often and add more water if needed to prevent sticking.

Tips & Substitutions

For added flavor, consider marinating the chicken in your favorite spices or herbs before cooking. If you want to use a different grain, quinoa or couscous can be excellent substitutes for rice. You can also use leftover cooked chicken to speed up the process. Just add it in after the vegetables have softened to heat through.

Serving Suggestions

This One Pot Chicken Dish pairs beautifully with a simple green salad or steamed vegetables for a complete meal. Consider serving it with crusty bread to soak up any remaining broth. For a variation, you might also enjoy it alongside side dishes like Ore-Ida Potatoes for a comforting, family-friendly dinner.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of water to the skillet over low heat, stirring occasionally until warmed through. Alternatively, you can microwave it in a covered dish, adding a bit of water to maintain moisture.

Frequently Asked Questions

Can I use other types of meat instead of chicken?

Absolutely! You can substitute turkey or even sausage for a different flavor profile. Just ensure that you adjust the cooking times accordingly, especially if you're using uncooked meats.

What can I do if my rice isn’t cooking properly?

If your rice isn’t cooking as expected, check the water level. You may need to add a little more broth or water and increase cooking time slightly. Stirring occasionally can also help prevent sticking and ensure even cooking.

Can I make this dish ahead of time?

Yes, you can prepare this dish in advance. Just cook it up to the point of adding the broth and rice, then cool and refrigerate. When ready to serve, reheat it gently, adding a bit of extra liquid if necessary to ensure the rice cooks through.
