- Peel and thinly slice the sweet onions.
- Saute the sliced onions in 2 tablespoons of margarine until tender.
- Set the sautéed onions aside.
- Melt the remaining margarine and mix it with the crumbled Ritz crackers.
- Press the cracker mixture into the bottom and sides of a pie pan to form the crust.
- Spoon the sautéed onions into the prepared crust.
- In a bowl, beat the eggs slightly and then mix in the milk, salt, and pepper.
- Pour the egg mixture over the onions in the pie crust.
- Sprinkle grated Cheddar cheese over the top of the pie.
- Bake at 350°F for 30 minutes or until the filling is set.
