A savory onion pie with a buttery cracker crust, melted cheese, and tender sautéed onions, perfect as a flavorful side dish for family dinners or gatherings.

Ingredients

  • 3 cups sweet onions, sliced
  • 8 tablespoons margarine
  • 1.5 cups Ritz crackers, crumbled
  • 3 eggs
  • 1.25 cups milk
  • 1/2 teaspoon salt
  • 1/2 cup grated Cheddar cheese
  • dash of pepper

Instructions

  1. Peel and thinly slice the sweet onions.
  2. Saute the sliced onions in 2 tablespoons of margarine until tender.
  3. Set the sautéed onions aside.
  4. Melt the remaining margarine and mix it with the crumbled Ritz crackers.
  5. Press the cracker mixture into the bottom and sides of a pie pan to form the crust.
  6. Spoon the sautéed onions into the prepared crust.
  7. In a bowl, beat the eggs slightly and then mix in the milk, salt, and pepper.
  8. Pour the egg mixture over the onions in the pie crust.
  9. Sprinkle grated Cheddar cheese over the top of the pie.
  10. Bake at 350°F for 30 minutes or until the filling is set.
